Come winter, and comes the chill that makes everyone want to just cuddle in extra soft and warm blankets and not leave the bed. While the woolen clothes will keep you externally warm, the body needs heat internally as well to sustain the chilly winters. Thus there are few special winter warmers recipes that will not just be a treat for your taste buds but also a good way to enjoy the winter and not merely freeze.
Root vegetable along with good stock can come together to become a delicious soup for the winters. The vegetable stock is made from those vegetable parts that you generally throw like the top and the bottom end of the carrot, the onion skin, broccoli stalks, cabbage leaves and the likes of other vegetables. Even adding an entire piece of onion or spring onion with some clove and other commonly used spices can prove to be easy ingredients to prepare your vegetable stock. In one liter of water, boil all the above mentioned ingredients to finally prepare the stock. This is the cheapest way to prepare your winter warmer recipe as the ingredients are as good as free since you are not any ways going to dispose of those parts of the vegetables. The vegetables to be used in your soup can be as per your likes, it can even include potatoes and tomatoes.
For the non vegetarian part of the dish, use the neck of the lamb with the bones, however drop the fat. If not, you can also take 200 grams of the neck fillets removing the fat from it. So let’s see how we can mix these ingredients to come up with a delectable soup.
Hearty Healthy Winter Warmer Soup
Basic Ingredients
400 grams lamb neck, chopped into medium sized pieces
600 grams of turnip, carrots, celeriac or parsnips
2 big potatoes cut into cubes
2 long celery sticks
1 bay leaf torn into large pieces
2-3 spoons of mixed herbs
1 big sliced onion
3 garlic cloves, chopped finely
1 liter of the vegetable stock as prepared above
12 pieces of the black peppercorns
1 tsp of the cayenne pepper
1 tsp of the hot paprika pepper
Olive oil as per requirement
100 grams of green beans that are finely cut
Method of preparation
In a pan with olive oil toss and fry the lamb neck with garlic and onion, until the onion becomes translucent.
Barring the green beans, toss all these ingredients to be mixed in a large pot having the rest of the ingredients.
Boil this mixture and keep stirring initially and later leave it alone to boil on slow fire.
Let this be on the pot for about 45 minutes and later add the green beans to this hot mixture and stir further for it to get cooked for another 15 minutes.
Remove the pot, pick out the celery sticks and dispose them, as the soup has already caught its flavor and these large flaccid sticks are not required anymore. Pour the soup into your best bowls and have this winter warmer piping hot.
